Zignum Mezcal

You've had blue. It's time to taste green.

Tequila is made of blue agave, as you well know since so many bottles brag of the fact. But did you know that blue is just one of the 136 species of agave that grow in Mexico?

The new Zignum Mezcal, produced by Mexico-based distillery Casa Armando Guillermo Prieto, is made of 100% green agave from the state of Oaxaca.

Zignum Mezcal is available in two styles: Silver Mezcal ($25.99) and Reposado Mezcal ($29.99).

I recently sampled the Reposado, which has a spiced vanilla scent and earthy, woodsy flavors that build jalapeno spicy intensity into the lingering finish.

With more than 400 years of history, mezcal is Mexico’s oldest spirit.

Zignum Mezcal boasts a production process that's "untouched by human hands." It uses only espadin green agaves—-considered to be the finest variety—-grown for a minimum of eight years before harvest.

According to the press materials, in traditional production techniques pieces of agave plants are placed in holes in the ground and “cooked” using layers of hot stones and banana leaf wrappings. This process does not allow smoke to escape, so it penetrates the agave chunks and gives them a distinct raw, smoky flavor. In contrast, Zignum Mezcal extracts the juices of the agave plant before steam-cooking them, which eliminates the smoky taste and reduces the levels of methanol and saturated alcohols.

Zignum Mezcal can be enjoyed on its own or mixed into a cocktail.

We tried it with our traditional margarita recipe (3 parts Zignum Mezcal, 2 parts triple sec and 1 part fresh lime juice shaken with ice). Delicious.

Additional cocktail options: For a "Z-Fresh" top Zignum Silver with a splash of Sprite or 7-UP. For an entertaining twist, cover the mixture with a napkin and tap it twice on the table to create a fizzy shot. For a tangy, more tropical taste, try Zignum Reposado with orange juice. Silver and Reposado can also each be combined with energy drinks to create a “Z-Bomb” or can be mixed with most juices and sodas. In addition, signature Zignum cocktails include “Zig & Ginger Ale,” “Zig & Coke” and “Reposado on the Rocks.”

Zignum White Sangria (in a Pitcher)

Ingredients:
10 white grapes cut in half
1 full granny apple cut in wedges
1 full peach cut in wedges
10 oz of Zignum Mezcal Silver
2 tbs sugar
20 oz fresh lemonade

Preparation:
Serve all the fruits in a pitcher. Add ice, sugar and Zignum Mezcal Silver. Finish with fresh lemonade.
