The famed Perigord (aka“black winter”) truffle—prized for its intense floral, fruity, earthy and muskyessences—is featured in a four-course menu created by Chef Brian Jones, andpresented from Saturday, January 26 to Saturday, February 2 in Atlanta Grill atThe Ritz-Carlton, Atlanta. Wine pairings for each course are selected bySommelier Brian White.

It may surprise some to learnthat the foothills of the Blue Ridge Mountains of East Tennessee have an environmentsuggestive of the region between the Massif Central and the Gold Coast near Provence. Dr. Tom Michaels,founder of Tennessee Truffles, successfully adapted French trufficulturemethods to the area in only seven years, and is now the largest producer in theU.S.Of course, a good truffle dog is essential, and the Italian truffle dog, LagottoRomagnolo, is among the breeds at work. Another tidbit: dogs are preferred overpigs to hunt truffles; seems the pigs like to eat the truffles.
